This afternoon I baked 3 different types of breads that I will be donating to the Men's Journey to Damascus here in Corpus Christi tonight.
The first bread I made was a Moist Pumpkin Bread and here's the recipe:
I used:
½ cup granulated sugar
½ cup dark brown sugar
1 cup + 1½ Tbsp all-purpose flour
¾ tsp baking soda
½ tsp baking powder
½ teaspoon salt
½ tsp cinnamon
½ tsp pumpkin spice
1 large egg (or 2 small ones)
¾ cup pumpkin puree
⅓ cup oil
⅓ cup water
In a large bowl, combine both sugars, flour, baking soda, baking powder, salt and spices.
In another bowl, combine egg, pumpkin puree, oil and water. Add wet ingredients to dry ingredients. Mix until combined.
Grease one 9×4 loaf pan and pour the batter into it.
Bake at 350 F for 45-60 minutes, or until a toothpick inserted in the middle comes out clean. Let cool for about 5 minutes. Then take out of the pan and wrap in aluminum foil. Let it cool off completely.
Moist Banana Bread:
3 bananas
3/4 cups of sugar
1/4 cup of oil
1 egg
1 1/2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoon cinnamon
Preheat oven at 350 degree
Mash bananas, add egg, sugar and cooking oil to your bananas. Add dry ingredients to banana mixture and stir just until moistened.
Spray bottom and side of a bread pan with cooking spray. Cook for 50-55 minutes.
Banana Raisin Bread
2 cups Water
1-½ cup Raisins
3 Bananas
1 cup Sugar
⅓ cups Corn Oil
2 whole Eggs
1-½ cup Flour
1 teaspoon Baking Soda
½ teaspoons Salt
1-½ teaspoon Vanilla
½ cups Walnuts, Chopped
Heat water to a boil in the microwave or on the stovetop. Turn off heat and add raisins. Set aside for about 15 minutes.
In a large bowl, mash the bananas with a potato masher.
Mix all other ingredients together. Stir until well combined.
Remove plumped raisins from the water and pat dry with paper towels. Fold into the batter.
Pour into a loaf pan and bake at 350ºF for 1 hour and 15 minutes.
